Veal carpaccio with beaked chestnuts, horseradish dressing and wild rose oil

Soup:

Creamy soup of burnt rutabaga and pears with black seeds oil

Main course:

Beef cheeks served with cauliflower purée, fried brussels sprouts, red fruit paste and demi-glace sauce

Salmon steak served with leek and potato tart, beetroots glazed with buckwheat honey and beurre blanc sauce

Dessert:

Sacher cake with apricot confiture, chocolate powder, raspberry coulis and crumbs

Veal chop stuffed with smoked plum with mustard sauce
Pork belly confit flavored with honey and cloves with cranberries

Herring marinated with cherries and plum vodka with sour cream and dill
Black turnip salad with radish, dates and hazelnuts
Salad with pulled pork , beetroots, dried apricot, pomegranate and gorgonzola sprinkled with linseed oil

Cod loin with chanterelles sauce and chopped chive
Beef roulade stuffed with Garlic and smoked bacon in its own juice
Veal escallops stewed with creamy mustard sauce
Potato  purée with baked Garlic and truffle oil
Grilled polenta with burnt butter and parmesan
Vegetable ratatouille with tomatoes and lemon thyme

Apple strudel with marinated raisins and macadamia nuts
