Goose pâté with fig purée, dried pear and roast pistacios

Soup:

Cream of roast red potatoes and chestnuts with truffle oil

Main course:

Duck breast sous-vide served with pumpkin purée, caramelized chicory, kale chips and demi-glace sauce
Or
Fried salmon fillet served  with green pea and chestnuts ragout with dill

Dessert:

Opera cake with cherries marinated with Crème de Cassis
